Saskatoon Cheesecake
A delicious no-bake saskatoon cheesecake recipe

- 2 cups whipping cream (35%)
- 16 oz cream cheese (2 bricks)
- 1/4 cup lemon juice
- 1/4 cup sugar
- 3 cups Saskatoon berries (fresh or frozen)
- 1/2 cup sugar
- 2 tbsp lemon juice
Graham Wafer Crust
- 2 cups crushed graham wafers / graham wafer crumbs
- 1/2 cup melted butter
- 1 tbsp sugar
Whip your whipping cream and set aside.
In a bowl, whip the cream cheese with 1/4 cup lemon juice and 1/4 sugar. Combine with the whipping cream.
In a mixing bowl, add three cups of saskatoon berries, 1/2 cup of sugar, and 2 tbsp lemon juice and blend.
Mix cream cheese and saskatoon berry mixture together. If using frozen berries defrost and strain juice out.
Crush graham crackers to equal 2 cups and mix with 1/2 cup butter and 1 tbsp sugar. Press into the bottom of a cheesecake pan.
Spread the cheesecake mixture and chill in the refrigerator for about 4 hours. Enjoy!!!
Frozen saskatoon berries work in this recipe. Defrost berries and omit juice adding the juice will make the filling runny.
Blueberries work equally as well in this recipe.
Garnish with whip cream and saskatoons if desired
