Ingredients

  • 2 cups all purpose flour
  • 1 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup butter 1 stick, room temperature
  • 3/4 cup granulated sugar
  • 2 eggs room temperature
  • 2/3 cup milk
  • 1 tsp vanilla extract
  • 2 cups blueberries

Streusel Topping Ingredients:

  • 2 tbsp butter chilled
  • 3 tbsp sugar
  • 3 tbsp brown sugar
  • 3 tbsp flour

Instructions

Make the muffins

  • Preheat Your Oven: Preheat your oven to 375 degrees F. Adjust your oven rack to the middle position for even baking. Line a muffin tin with paper liners and lightly spray with nonstick cooking spray.
  • Prepare Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • Mix Wet Ingredients: In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in the milk and vanilla extract until fully incorporated.
  • Combine Ingredients: Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to over-mix, as this can result in tough muffins. Gently fold in the blueberries using a spatula or wooden spoon. The muffin batter will have a thick consistency.
  • Fill Muffin Cups: Evenly distribute the batter into the prepared muffin cups, filling each one to the top.

Streusel Topping

  • Prepare Streusel: In a small bowl, combine the chilled butter, flour, sugar, and brown sugar. Use two forks or a pastry cutter to mix the ingredients until they resemble a sandy, crumbly texture.
  • Top Muffins: Sprinkle about 2-3 teaspoons of the streusel mixture on top of the muffins.

Bake

  • Bake: Place the muffins in your preheated oven and bake for 20-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Cool: Allow the muffins to cool in the muffin pan on a wire rack for 20 minutes. Then, transfer them from the muffin tin to the rack to cool completely.
  • Enjoy: Once cooled, enjoy your homemade Starbucks-style blueberry muffins with a cup of your favorite coffee or tea!
