- 3 large ripe bananas
- 3/4 cup white sugar
- 1 egg
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 11/2 cups flour if batter seems thin add up to 1/2 cup more
- 1/3 cup melted butter or margarine
- 2/3 cup chocolate chips mini chocolate chips are very good
In a large mixing bowl or stand mixer mash bananas; add sugar and slightly beaten egg
Add melted butter
In a separate bowl sift flour baking powder, baking soda and salt.
Add dry ingredients to the first banana mixture and stir until just combined
Fold in chocolate chips
Distribute batter between 12 muffin paper liners or greased muffin pan
Bake at 375 degrees for 18 minutes or until lightly browned on top
