Apple Pecan Cake

Moist and delicious apple pecan cake. Perfect with a cup of coffee.

  • 9 inch tube pan

Ingredients
  

  • 1 cup pecans, chopped
  • 1 1/2 cups sugar, divided
  • 1 teaspoon ground cinnamon
  • 2 cups flour
  • 1 teasppon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter or margarine
  • 2 large eggs
  • 1 teaspoon vanilla
  • 1 cup sour cream
  • 1 large apple (peeled and sliced)

Instructions
 

  • Grease 9" tube pan.
  • Combine pecans, 1/2 cup sugar and cinnamon in a small bowl. Set aside.
  • In a medium bowl combine the flour, baking soda, baking powder and salt.
  • In a large mixing bowl combine the butter and remaining 1 cup of sugar. Beat until creamy.
  • Add eggs and vanilla and beat until light and fluffy.
  • Add flour mixture alternately with sour cream a quarter at a time. Beating well after each addition.
  • Peel and slice the apple.
  • Heat oven to 325 degrees.
  • Spread half the batter in the bottom of prepared pan.
  • Add apple slices on top of batter and sprinkle with cinnamon mixture on top of apples.
  • Add remaining batter and sprinkle remaining cinnamon sugar on top.
  • Bake 50-60 minutes or until a toothpick inserted comes out clean.
  • Remove from oven and cool for 15 minutes.
  • Invert pan onto a serving plate.
  • Serve as is or drizzle a little icing over the top and let it drip down sides.

Notes

If desired once cool the cake can be wrapped and frozen for later use.
