Apple Pecan Cake
Moist and delicious apple pecan cake. Perfect with a cup of coffee.

pecans, chopped

sugar, divided

ground cinnamon

baking powder

baking soda

butter or margarine

eggs

teaspoon
vanilla
1
cup
sour cream
1
large
apple (peeled and sliced)
Instructions
Grease 9" tube pan.
Combine pecans, 1/2 cup sugar and cinnamon in a small bowl. Set aside.
In a medium bowl combine the flour, baking soda, baking powder and salt.
In a large mixing bowl combine the butter and remaining 1 cup of sugar. Beat until creamy.
Add eggs and vanilla and beat until light and fluffy.
Add flour mixture alternately with sour cream a quarter at a time. Beating well after each addition.
Peel and slice the apple.
Heat oven to 325 degrees.
Spread half the batter in the bottom of prepared pan.
Add apple slices on top of batter and sprinkle with cinnamon mixture on top of apples.
Add remaining batter and sprinkle remaining cinnamon sugar on top.
Bake 50-60 minutes or until a toothpick inserted comes out clean.
Remove from oven and cool for 15 minutes.
Invert pan onto a serving plate.
Serve as is or drizzle a little icing over the top and let it drip down sides.
Notes
If desired once cool the cake can be wrapped and frozen for later use.
