How to Make Banana Cake
The recipe starts with 1 cup of mashed bananas, or about 3 small ripe bananas (above). For the best result use bananas are nice and ripe. The bananas you see above are just right (and it’s what you want for banana muffins too. Over ripe bananas = sweeter, more banana flavor. You should be able to mash the bananas easily with a fork or let your mixer do the work for you.
I like to use the same mixer I use for creaming the butter and sugars. Beat the bananas on high speed for a minute, then transfer to another bowl. I don’t even wash the mixing bowl—just throw the butter right in and start creaming!
How to Make the Nutella Frosting
The frosting couldn’t be easier just warm up some Nutella and pour over the top of the warm banana cake. As it cools it will thicken, but still be creamy.
One thing to note: Buttermilk makes this cake moist. The cake wouldn’t be what it is without it! You also need the acid in buttermilk to help the baking soda do its job. I don’t often have buttermilk so I just use sour milk which works just as well. For this recipe, you need 1/2 cup of buttermilk. If you don’t keep buttermilk on hand either, measure 1 teaspoon of lemon juice or white vinegar. Pour into a liquid measuring cup. Then add enough milk until it reaches 1/2 cup. Stir together, let it sit for 5 minutes, then use in the recipe.
Can I Use Frozen Bananas?
Yes, and I do this often. Thaw the frozen bananas at room temperature. Drain off any excess liquid, mash, then use as instructed in the recipe below.
Can You Freeze Banana Cake with Nutella Frosting?
Yes, banana cake freezes beautifully. If you plan on freezing it, I would recommend only adding the Nutella frosting later when you want to serve the cake. Wrap the cake in plastic wrap and put in an airtight container. It should last up to 3 months in the freezer.

Ingredients
- 1/2 cup unsalted butter, softened
- 2/3 cup sugar
- 1/3 cup firmly packed brown sugar
- 1 cup mashed banana (about 3 small ones)
- 1/2 cup whole buttermilk or sour milk (* see note)
- 2 large eggs room temperature
- 1 teaspoon vanilla extract
- 1 2/3 cup all purpose flour
- 1 tsp baking powder
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1/3 cup chocolate chips
- 1 cup Nutella Hazelnut spread
Instructions
- In a bowl beat butter and sugars at medium speed until well combined.
- Add mashed banana, buttermilk, eggs, and vanilla and beat until well combined.
- In a medium bowl, whisk together flour, baking powder, baking soda and salt,
- With the mixer on low speed add flour mixture slowly and stir until just combined. Fold in chocolate chips.
- Spoon batter into prepared pan. Bake until a toothpick inserted in center comes out clean. 35-40 minutes.
- Warm 1 cup of Nutella in the microwave for 20 seconds until it is spreading consistency.
- While cake is still warm spread Nutella over the top. Enjoy!
