I have been baking this pumpkin bread since I was a teenager. The recipe was originally called It Smells Like Christmas Pumpkin Bread. I find the book quite interesting and keep it on the coffee table after thanksgiving as a reminder to start baking and making Christmas plans.

Equipment
- 7 mini loaf Pans
- 2 9×5 loaf pans
Ingredients
- 3 1/2 cups flour
- 2 tsp baking soda
- 1 1/2 tsp salt
- 1 tsp baking powder
- 2 tsp cinnamon
- 2 tsp nutmeg
- 1 tsp allspice (optional)
- 1/2 tsp ground cloves
- 3 cups sugar
- 2/3 cup water
- 1 cup oil
- 5 eggs beaten
- 16 ounces canned pumpkin (1 can)
- 1 cup chopped pecans
Instructions
- Grease 2 9x5x3 inch loaf pans.
- In a large bowl mix together all the dry ingredients.
- Blend in the water and oil. Mix in the eggs.
- Blend in the pumpkin.
- Fold in the pecans.
- Divide batter between 2 loaf pans.
- Bake at 350 degrees for 1 hour, or until toothpick inserted in the center comes out clean.
