Apple Pecan Cake
Equipment
- 9 inch tube pan
Ingredients
- 1 cup pecans, chopped
- 1 1/2 cups sugar, divided
- 1 teaspoon ground cinnamon
- 2 cups flour
- 1 teasppon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup butter or margarine
- 2 large eggs
- 1 teaspoon vanilla
- 1 cup sour cream
- 1 large apple (peeled and sliced)
Instructions
- Grease 9" tube pan.
- Combine pecans, 1/2 cup sugar and cinnamon in a small bowl. Set aside.
- In a medium bowl combine the flour, baking soda, baking powder and salt.
- In a large mixing bowl combine the butter and remaining 1 cup of sugar. Beat until creamy.
- Add eggs and vanilla and beat until light and fluffy.
- Add flour mixture alternately with sour cream a quarter at a time. Beating well after each addition.
- Peel and slice the apple.
- Heat oven to 325 degrees.
- Spread half the batter in the bottom of prepared pan.
- Add apple slices on top of batter and sprinkle with cinnamon mixture on top of apples.
- Add remaining batter and sprinkle remaining cinnamon sugar on top.
- Bake 50-60 minutes or until a toothpick inserted comes out clean.
- Remove from oven and cool for 15 minutes.
- Invert pan onto a serving plate.
- Serve as is or drizzle a little icing over the top and let it drip down sides.
Notes
Here is a 9-inch tube pans I found on Amazon. It would make an extra pretty coffee cake if you are looking for a tube pan.
