About Banana Muffins with Chocolate Chips
This Chocolate Chip banana muffin recipe is my go-to snack when I have really ripe bananas that I want to use up. These muffins smell so good when they are baking, the irresistible aroma will have you wanting to bite into one as soon as they are out of the oven.
They are soft, and sweet and make the perfect treat for breakfast, brunch, or a quick snack. If you are looking for more lunch snack ideas check out this recipe for banana cake with Nutella frosting, soft pumpkin cookies and pumpkin bread .
Recipe Variations
Over the years I have experimented with adding different ingredients to the recipe. You could add milk chocolate, dark chocolate or white chocolate chips. You could add pecans or walnuts in the recipe. Also, blueberries or cranberries are great additions. I have made these muffins gluten free by adding an equal amount of good all-purpose gluten free flour.
Storing your Banana Muffins with Chocolate Chips
After baking let the muffins cool and place in a storage container. They will last for about 1 week in the fridge or 6 months in the freezer. These muffins are perfect to bake ahead and pull out of the freezer as needed. Warm them up in the microwave for 30 seconds for a quick breakfast or they can be added frozen to your lunch bag. They will be defrosted by lunch time.
Can I Use Frozen Bananas?
Yes, and I do this often. Thaw the frozen bananas at room temperature. Drain off any excess liquid, mash, then use as instructed in the recipe below.
