I have an abundance of saskatoon berry bushes growing all around my property. This summer I picked many pails and put them in my freezer but it’s time I start using them up. I made this cheesecake using frozen Saskatoons and it turned out so delicious. You must try this recipe.
With only a few simple ingredients it doesn’t take long to prepare and is inexpensive. I made this no bake saskatoon cheesecake recipe in March using frozen Saskatoons. I wasn’t sure how it would turn out using frozen saskatoons but it came out perfect. It was a special request for a birthday instead of the usual birthday cake. Everyone loved it and I know you will too. So grab some saskatoons and get baking!
What you’ll need to make no bake saskatoon cheesecake recipe
For the crust:
- graham crumbs
- butter, melted
- sugar
For the cheesecake layer:
- whipping cream
- cream cheese bricks
- sugar
- saskatoons
- lemon juice
How to make no bake saskatoon cheesecake
No bake saskatoon cheesecake comes down to 2 easy layers: a buttery graham cracker base, a cream cheese layer.
To start, I make the graham crust. You can even do this step a day or even a few days in advance. Place all the ingredients in a bowl, combining the graham crumbs, melted butter and sugar. and press in the bottom of a springform pan that has been lined with parchment paper and place in the fridge to chill while you work on the next layer.
Next, start making the whipped cream when it is whipped set aside. In a mixing bowl beat the softened cream cheese with 1/4 cup lemon juice and 1/4 sugar until it is smooth. Fold in the whipped cream.

In a separate mixing bowl combine saskatoon berries with, 1/2 cup of sugar and 2 tbsp. of lemon juice.

Equipment

Ingredients
- 2 cups whipping cream (35%)
- 16 oz cream cheese (2 bricks)
- 1/4 cup lemon juice
- 1/4 cup sugar
- 3 cups Saskatoon berries (fresh or frozen)
- 1/2 cup sugar
- 2 tbsp lemon juice
Graham Wafer Crust
- 2 cups crushed graham wafers / graham wafer crumbs
- 1/2 cup melted butter
- 1 tbsp sugar
Instructions
- Whip your whipping cream and set aside.
- In a bowl, whip the cream cheese with 1/4 cup lemon juice and 1/4 sugar. Combine with the whipping cream.
- In a mixing bowl, add three cups of saskatoon berries, 1/2 cup of sugar, and 2 tbsp lemon juice and blend.
- Mix cream cheese and saskatoon berry mixture together. If using frozen berries defrost and strain juice out.
- Crush graham crackers to equal 2 cups and mix with 1/2 cup butter and 1 tbsp sugar. Press into the bottom of a cheesecake pan.
- Spread the cheesecake mixture and chill in the refrigerator for about 4 hours. Enjoy!!!

How long does cheesecake take to set?
The recipe for the cream cheese layer produces a pretty thick layer but it still needs time in the fridge to firm up. 3-4 hours is enough to achieve the perfect firmness that makes it easy to slice and serve.
How to get a silky smooth cheesecake
Make sure your cream cheese is at room temperature or it will be too hard to beat. If you use cream cheese right out of the fridge, it will be too thick and solid and you will wind up with chunks in your cheese layer. Make sure you let your cream cheese soften before getting started. If you notice that it is lumpy and hard to beat, you can heat it in the microwave for a few seconds to soften it a bit and that should help you beat it until it smooth.
Mix cream cheese first before adding other ingredients. To make sure it is really smooth and creamy. Incorporate the whip cream evenly into the cream cheese but folding it over and over until completely combined.
How to store cheesecake
You must store cheesecake in the refrigerator because it will spoil if it isn’t refrigerated. It also tasted way better chilled.
Refrigeration also helps keep it firm enough to slice and serve easily so even though you can keep it out for a bit before serving, I recommend keeping it in the fridge until just before you serve it so that it is nice and firm.

Yes, you can freeze cheesecake! Wrap it up to protect it from freezer burn and it should last you a couple of months in the freezer. Just thaw in the fridge overnight before enjoying.
